Cooking Corner: Thai Chicken Balls

Food is an essential element in all our lives. In today’s busy environment getting the family around the table to share a wholesome home cooked meal can be a challenge. At Coeus Advisers we will share with you some of our own special recipes, feel free to use these at your own risk to satisfy the hunger of your loved ones. We will start with one of my quick and easy favourite dishes, Thai Chicken Balls.

Ingredients:

  • 1 bunch of coriander finely chopped
  • 800 grams chicken thigh or breast fillet
  • 2 red chillies
  • 3 cloves of garlic
  • Juice of 1 freshly squeezed lime
  • 2 eggs
  • 100 mls Soy Sauce
  • 300 mls Sweet Chilli Sauce
  • 3 tablespoons of bread crumbs

Instructions:

  • Add all ingredients into a blender
  • Once fully blended roll the ingredients into balls approximately 5cm diameter (makes approximately 40 balls)
  • Fry or BBQ for approximately 3 to 4 minutes
  • Serve with rice or garden salad
